Luscious Tropical Fruit Salad with Honey and Mint
This salad can be made with just one or two fruits or expanded to include many varieties. The important thing is that the fruits be fresh, juicy, flavorful and succulent. Fruits should be cut into pieces that are small enough to be eaten with a spoon but large enough to keep their shape when cut. You want the fruits to release some juices to meld with the lemon-honey dressing but not so much that the salad gets mushy.
This salad is a perfect contribution to a summer potluck! Any leftovers are delicious as an addition to plain yogurt.
Luscious Tropical Fruit Salad with Honey and Mint
Mix any of the following in a bowl:
Fresh mango, peeled and cut into pieces
Orange segments, cut into quarters
Grapes, halved
Fresh Pineapple, cut into chunks
Kiwi, peeled and cut into pieces
Stone fruits (peaches, plums, apricots) cut in pieces ONLY if in season and delicious!
Whole fresh blueberries (avoid raspberries or blackberries - they will stain the other fruits)
Mix fresh lemon juice (including pulp) with 1 tablespoon honey into a syrup to taste - he proportions will vary depending on what honey you are using, how sweet you want the salad to be and the combination of fruits you have chosen. Pour lemon-honey mixture over salad and toss with 10 (or so) fresh mint leaves.
